Okay, so today I wanted to dive into some Lenten recipes, you know, the Catholic thing. I figured I’d give it a go since I’ve been trying to eat a bit healthier and, well, it seemed like a good challenge. Lent is all about giving something up, right? So, I thought, why not give up meat for a while?
First thing I did was hit up the internet to get some ideas. I gotta say, there were tons of options out there. I was looking for stuff that wasn’t too complicated, you know, things I could actually make without spending hours in the kitchen.

My First Attempt
I decided to start with something simple: vegetable soup. I figured, how hard could it be? I grabbed a bunch of veggies from the fridge – carrots, potatoes, onions, some celery, and I even threw in some zucchini ’cause why not? I chopped everything up, which took a bit longer than I thought it would, to be honest.
Then, I tossed everything into a big pot with some vegetable broth, added some salt, pepper, and a bay leaf. I let it simmer for a while, and you know what? It wasn’t half bad! It was pretty filling, too. I was actually surprised at how much I liked it.
Getting More Adventurous
After that, I felt a bit more confident, so I tried making pasta with marinara sauce. I used whole wheat pasta to make it a bit healthier. For the sauce, I just used canned tomatoes, some garlic, onions, and a bunch of herbs like oregano and basil. I let the sauce simmer for a bit to let the flavors blend. And man, it was good! Even my kids, who are usually picky eaters, loved it.
- First try: I was aiming for a simple veggie stir-fry. Found some broccoli, bell peppers, and tofu in the fridge. Chopped them up, threw them in a pan with some soy sauce and garlic. Not gonna lie, it looked kinda sad, but I ate it anyway. Lesson learned: tofu needs more love than I gave it.
- Round two: Decided to go with a lentil soup. I’d heard good things. Found a recipe online, followed it step by step. It involved a lot of chopping – onions, carrots, celery. Then into the pot they went with lentils, broth, and some spices. Simmered for like an hour. The result? Surprisingly delicious! I even impressed myself a little.
- Feeling brave: I attempted a bean burger. Mashed up some black beans, mixed them with breadcrumbs, spices, and an egg (I’m not super strict, okay?). Formed them into patties and cooked them in a pan. They held together better than I expected! Served them on buns with some lettuce and tomato. It wasn’t a Big Mac, but it was pretty darn tasty.
My Final Thoughts
So, yeah, that’s been my journey with Lenten recipes so far. I’ve learned that cooking without meat isn’t as hard as I thought it would be. There are so many tasty options out there. And honestly, I feel pretty good! I might even keep some of these meals in my rotation after Lent is over. It is an interesting challenge! If you guys are thinking about trying some meatless meals, I’d say go for it! You might be surprised at what you discover.
