So, I’ve been on this kick lately, trying to cut down on butter. Not that I have anything against butter, it’s just, you know, sometimes you want a treat without feeling like you’ve eaten a whole stick of the stuff. Plus, my jeans were starting to complain. Anyway, I’ve been experimenting with desserts that don’t need butter, and let me tell you, it’s been a wild ride.

My First No-Butter Adventure

First, I tried making some cookies. I found this recipe online that used oil instead of butter. Seemed simple enough, right? I mixed everything together, following the instructions to a T. I even got a little excited, thinking I’d cracked the code to healthy-ish baking.

  • Melted coconut oil: This is what I used.
  • Sugar: Of course, can’t have cookies without it.
  • Eggs: Just a couple.
  • Flour, baking soda, the usual suspects: You know the drill.

I popped them in the oven and waited. The smell was amazing, I’ll give it that. But when I took them out, they looked…off. They were flat as pancakes, and when I tried one, well, let’s just say it wasn’t exactly a cookie. More like a sweet, oily, chewy…thing.

The Avocado Brownie Experiment

Next up, I got a little more adventurous. I’d heard about people using avocados in brownies. Sounds crazy, I know, but I was willing to try anything. I found a recipe, mashed up some ripe avocados, and got to work.

  • Avocado: Ripe and ready.
  • Cocoa powder: The more the merrier.
  • Sugar: Still needed that sweetness.
  • Eggs, flour, and the rest: Same as before.

This time, I was a bit more careful. I didn’t want another pancake situation. I baked them for the recommended time, and they actually looked like brownies! I was so proud. I let them cool, cut myself a square, and took a bite. Hmm, not bad, not bad at all. They were fudgy, chocolatey, and you couldn’t even taste the avocado. I think I high-fived myself.

The Banana Nice Cream Discovery

Then, there’s this thing called “nice cream.” Have you heard of it? It’s basically frozen bananas blended into ice cream. No dairy, no butter, just bananas. I was skeptical, but I gave it a shot.

  • Frozen bananas: That’s it, just bananas.

I threw some frozen banana chunks into my blender, added a splash of vanilla extract, and let it rip. It took a while, and I had to stop and scrape down the sides a few times, but eventually, it turned into this creamy, dreamy, ice cream-like thing. I couldn’t believe it. I topped it with some chocolate chips (because why not?), and it was honestly delicious.

So, yeah, my journey into the world of butter-free desserts has been interesting, to say the least. There have been some fails, some wins, and a whole lot of learning. But it’s been fun, and I’m definitely going to keep experimenting. Who needs butter when you’ve got avocados and bananas, right?
