Alright, so today I’m gonna spill the beans on my kitchen escapade: making Woodside Kitchen-style salad dressing. I know, sounds fancy, but trust me, it’s easier than ordering takeout. Let’s dive right in!
It all started with me staring into a fridge full of sad-looking lettuce. I was craving something more than just boring vinaigrette. I remembered having this amazing salad at a friend’s place, and she mentioned it was inspired by Woodside Kitchen. So, naturally, I googled it.

First things first, I gathered my ingredients. The general gist I got was: good olive oil, some kind of vinegar (I went with red wine vinegar), Dijon mustard (crucial!), garlic, honey (or maple syrup, if you’re feeling fancy), and some herbs. I also grabbed some lemon juice just in case.
Then came the mixing. This is where it gets fun. I started with about a quarter cup of olive oil in a small bowl. Then, I added a tablespoon of red wine vinegar. Next up, a teaspoon of Dijon mustard. Don’t skimp on the mustard; it gives it that tang.
Now for the flavor punch. I minced one clove of garlic – finely! Nobody wants big chunks of garlic in their salad dressing. I tossed that in, along with a drizzle of honey, maybe half a teaspoon. Time to squeeze in some lemon juice – just a little, like a teaspoon.
I gave it all a good whisk. And I mean a good whisk. You want everything to emulsify and come together. It should look creamy-ish. At this point, I took a tiny taste. It was… okay. But it needed something.
More herbs! I had some fresh thyme and parsley on hand, so I chopped them up really small and stirred them in. Then, a pinch of salt and pepper. Another taste. Much better!
Here’s the thing: I felt like it was still missing a bit of a kick. So, I added a tiny, tiny pinch of red pepper flakes. Like, seriously tiny. I didn’t want it to be spicy, just to have a little something extra.
I whisked it again, tasted it again, and… bingo! It was exactly what I wanted. Tangy, a little sweet, garlicky, and herby. I poured it over my sad lettuce, added some chopped cucumbers and tomatoes, and actually enjoyed my salad.
Cleanup was easy, and I had a great salad dressing that was way better than anything I could buy at the store. Plus, I know exactly what’s in it!
