Today, I decided to dive into the world of French cuisine, specifically focusing on vegetables. I’ve always admired the way the French elevate simple ingredients, so I picked this as my little culinary adventure.
Getting Started
First, I gathered my ingredients. I didn’t want anything too fancy, so I went with what I had on hand and what looked good at the local market:

- Carrots
- Potatoes
- Green beans
- Onions
- Garlic
- Fresh thyme and rosemary (from my little herb garden!)
- Olive oil
- Salt and pepper
The Cooking Process
I started by prepping the vegetables. I peeled and chopped the carrots and potatoes into bite-sized pieces. The green beans just needed a quick trim. I diced the onions and finely minced the garlic – my kitchen already smelled amazing!
Next, I heated some olive oil in a large pan. I tossed in the onions and garlic, letting them sizzle until they were fragrant and slightly golden. Then, I added the carrots and potatoes, stirring them around to coat them in the oil. I seasoned everything with salt, pepper, and a generous amount of fresh thyme and rosemary.
After about 10 minutes, I added the green beans to the pan. I wanted them to stay a bit crisp, so I didn’t want to overcook them. I covered the pan and let everything simmer for another 15-20 minutes, stirring occasionally, until the vegetables were tender but not mushy.
