Okay, so I’ve been trying to eat a bit healthier lately, but Easter is coming up, and you know what that means – desserts galore! I didn’t want to totally miss out on the fun, so I decided to try my hand at some low-cal Easter desserts. I figured, why not share my little kitchen adventure with you all?
First off, I went on a bit of a scavenger hunt for recipes. I wanted stuff that wouldn’t make me feel like I was eating “diet” food, you know? After digging around, I found a few that looked promising – fruity parfaits, some creamy pudding-like things, and a couple of other goodies. I grabbed my apron and got to work.

Fruity Parfaits
I started with the parfaits. Super easy, honestly. I just layered some low-fat yogurt with a bunch of berries – strawberries, blueberries, raspberries – you name it. I also threw in a little bit of granola for some crunch. I did this a few times in a glass, making these pretty layers, and popped them in the fridge to chill.

Creamy Pudding
Next up, the creamy pudding. This one was a bit more involved, but still pretty simple. I found a recipe that used chia seeds, almond milk, a bit of honey, and some vanilla extract. I mixed it all together and let it sit in the fridge for a few hours. The chia seeds did their thing and made this thick, pudding-like texture. I topped it with some more fresh fruit because, why not? It looked kind of fancy, to be honest.

I also experimented with a couple of other recipes, like some baked apples with cinnamon and a touch of brown sugar, and even some mini fruit tarts using a low-calorie crust I found at the store. I must say that was really hard to find it. Those were a bit more work, but they turned out pretty good too! But the apples were a bit too sweet for me.
After a few hours of cooking, mixing, and a fair bit of tasting, I had a nice little spread of low-cal Easter desserts. They actually looked pretty good, if I do say so myself. When my family came over for our little pre-Easter get-together, I brought them out, a bit nervous, not going to lie. But you know what? They were a hit! Everyone loved them, and no one even guessed they were low-calorie. Success!
