Okay, so I’ve been trying to cut down on carbs lately, and let me tell you, it’s been a bit of a journey. Back home, I started with the zoodles. I washed that zucchini and then used a spiralizer to turn them into noodles. It was actually kinda fun, watching those long strands come out. I tossed them in a pan with a little olive oil and cooked them until they were tender but not mushy. That took about, I don’t know, 5-7 minutes?
Making the Meat Sauce
While the zoodles were cooking, I started on the meat sauce. I browned the ground beef and Italian sausage in a separate pan, breaking them up with a spoon. Once they were cooked, I drained off the excess fat. Then, I threw in the chopped onions, peppers, and mushrooms, and cooked them until they softened up a bit. After that, I poured in the marinara sauce, added some Italian seasoning, and let it all simmer for a while so the flavors could, like, get to know each other.
Finally, I combined the zoodles and the meat sauce, topped it all off with a generous amount of mozzarella cheese, and popped it in the oven until the cheese was all melty and bubbly. It took around 15-20 minutes, but honestly, the smell was so good, it felt like forever.
The Result
The result? A pretty darn good low-carb Italian meal! The zoodles were a great substitute for pasta, and the meat sauce was packed with flavor. Plus, the melted cheese on top? Chef’s kiss! The whole meal was fulfilling, and I didn’t feel like I missed out on carbs at all. It was a simple, healthy low-carb meal.
