Alright, listen up, y’all. We gonna make some pizza dough, like that fancy California place, you know? The one with the long name. California Pizza Kitchen, that’s it. Don’t you worry none, it ain’t gonna be hard. I learned it from my niece’s girl, she got it off the internet. Says it’s the real deal, the Famous California Pizza Dough Recipe, so we gonna give it a whirl.

First off, you gotta get your stuff together. Don’t go runnin’ around like a chicken with its head cut off later. We need that yeast stuff, you know, the kinda makes things rise up all puffy like. Get yourself one of them little spoons, a teaspoon they call it, and measure that out. Then warm water, not too hot, not too cold, just right, like baby bear’s porridge. You need half a cup and then some, maybe a big spoon more. That’s half a cup plus one tablespoon, for you fancy folks.

  • 1 teaspoon yeast
  • 1/2 cup plus 1 tablespoon warm water

Now for the flour. The recipe says bread flour is good, or that all-purpose stuff will do too. I say use whatever you got on hand. Don’t go buyin’ nothin’ special. We ain’t made of money, you know? You need one and a half cups of that flour. And sugar, yeah, gotta have a little sweetness. Two teaspoons of that. Just dump it all in a big bowl. Don’t be shy, get your hands in there!

  • 2 teaspoons sugar

This recipe, she calls it a copycat pizza dough recipe. Means it’s supposed to taste just like the real thing, from that California place. I ain’t never been to California, but if their pizza dough is this easy, maybe I shoulda gone. Anyway, mix it all up, that yeast and water first, let it sit a bit, get all foamy. Then dump in the flour and sugar. Mix it good. Gotta get your hands dirty for this part. Knead it, they say. Push it and pull it, like you’re wringin’ out a wet rag, but be gentle. Don’t want to tear it up.

Now, some folks, they get all fancy about it. They say the water gotta be just the right temperature. And they use half this flour and half that flour, somethin’ about makin’ it strong and puffy at the same time. They even put honey in it instead of sugar, says it makes the crust all brown and crispy. Well, I say, if you want to make California pizza, you do what you gotta do. But for me, simple is best.

Keep kneadin’ that dough till it gets all smooth and stretchy. Takes a while, maybe ten minutes, maybe more. Don’t rush it. Then you gotta let it rest. Put it in a bowl, cover it up with a damp cloth, and let it sit somewhere warm for an hour or so. It’ll double in size, like magic! That’s the yeast doin’ its work. If it don’t rise up much, maybe your yeast is old, or your water was too cold. Happens to the best of us.

After it’s risen up all nice and big, punch it down. Yeah, just punch it right in the middle, get all that air out. Then you can roll it out, make your pizza. Put whatever you want on top. Sauce, cheese, peppers, onions, whatever your heart desires. I like it simple, just some sauce and cheese, maybe some sausage if I’m feelin’ fancy. Bake it in a hot oven, till the crust is all golden brown and the cheese is melted and bubbly. And there you have it, your own California Pizza Kitchen dough, made right in your own kitchen.

This easy-to-follow recipe, it ain’t so hard, is it? Just takes a little time and effort. And the best part is, you know exactly what’s in it. No funny chemicals or preservatives, just good old-fashioned ingredients. So go on, give it a try. You might just surprise yourself. And if it don’t turn out perfect the first time, don’t worry about it. Just keep practicin’. You’ll get the hang of it eventually. Now, if you’ll excuse me, I gotta go preheat my oven.
