Okay, so yesterday I was feeling kinda blah, you know? Like my body was just screaming for a reset. I remembered reading something about “fasting soups” and figured, hey, why not give it a shot?
First thing I did was hit up Google. I typed in “fasting soup recipes” and BAM! a ton of stuff popped up. I skipped all the fancy-pants ones with ingredients I’d never heard of and focused on stuff I already had in my fridge and pantry.

I found a recipe that looked super simple: basically just vegetable broth, some chopped veggies (carrots, celery, onion), and a bit of seasoning. Sounded easy enough.
So, I started by chopping up the veggies. I’m not gonna lie, my knife skills aren’t exactly Michelin-star level, but I got the job done. Threw everything into a big pot with the broth. I used some low-sodium vegetable broth I had leftover from another recipe. I added a bay leaf, some dried thyme, and a pinch of salt and pepper.
Then, I brought it all to a boil and then simmered it for like, an hour. The longer it simmers, the more the flavors meld together, you know? Plus, it makes the veggies super soft and easy to digest.
While the soup was simmering, I just chilled out, read a book, and tried not to think about all the pizza I could be eating instead. It was a bit tough, not gonna lie.
