Okay, so, I’ve been seeing these super simple peanut butter cookie recipes all over the internet lately. You know, the ones that claim you only need like, four ingredients? I was skeptical, but also really curious. Plus, I had a jar of peanut butter that was just begging to be used. So, I decided to give it a shot.
First things first, I grabbed my ingredients. It was almost too easy, just peanut butter, sugar, an egg, and a bit of vanilla extract. I felt like I was missing something, but the recipes all said this was it.

- Peanut Butter: I used about a cup of the creamy kind.
- Sugar: Same amount as the peanut butter, a cup. I just used regular white sugar.
- Egg: Just one large egg.
- Vanilla Extract: A teaspoon of this stuff.
I dumped all of this into a big bowl and started mixing. It was kinda weird at first, just this goopy mess of peanut butter and sugar. But, as I kept mixing, and I mean, I really had to use some elbow grease here, it started to come together into a dough. It was a pretty thick dough, not like the usual cookie dough I’m used to.
Once it was all mixed, I started scooping out little balls of dough and placing them on a baking sheet. I didn’t even bother to grease the sheet, which felt wrong, but I went with it.
