Alright, let’s talk ’bout them potatoes in Indian food, the kind they write about in the big city newspapers, you know, the “NYT” and such. I ain’t no fancy cook, mind you, but I know good eatin’ when I taste it, and potatoes, well, they’re good eatin’ any which way you fix ’em.

Now, them Indian folks, they sure know how to use potatoes. I’ve seen ’em do all sorts of things with ’em. They put ’em in curries, they fry ’em up, they even mash ’em sometimes, kinda like we do, but with a whole lot more spices. It smells real good, makes your mouth water just thinkin’ about it.

One thing I like is that spinach and potato curry. Healthy stuff, they say. Full of vitamins and such. Don’t know much about that, but I know it fills your belly and tastes mighty fine. They chop up the spinach real fine, and the potatoes, they’re soft and cooked just right. Not too mushy, not too hard. Just right.

  • Making it Simple: You don’t need no fancy kitchen or nothin’. Just a pot and some spices. And potatoes, of course. Can’t forget them potatoes!
  • Spices is Key: They use a lot of spices, them Indian folks. Turmeric, that yellow stuff, and chili powder, to make it hot. And ginger, and garlic. Smells strong, but tastes real good in the food. You get used to it.
  • Quick Cooking: It don’t take all day to make neither. Some of them dishes, they’re ready in half an hour, maybe less. Fry up some onions, throw in the spices, add the potatoes and spinach, and let it simmer. Easy peasy.

I remember seein’ a recipe once. Said it took 10 minutes to get everything ready, 20 minutes to cook it. That’s quick! They used oil, onions, salt, and that cayenne pepper, the hot stuff. Said you gotta scrub them potatoes good, then boil ‘em till they’re soft. Makes sense. Nobody wants a hard potato in their curry.

Boiling Potatoes Just Right

Boilin’ potatoes, that’s somethin’ I know a thing or two about. You gotta cover ‘em with water, see? And don’t go peekin’ at ‘em every five minutes. Let ‘em cook. When they’re tender, they’re done. You can poke ‘em with a fork to check. If the fork goes in easy, they’re ready.

Now, if you can’t find them little bitty new potatoes, don’t you fret. Just use regular ones. Cut ‘em up small, if you want. They’ll cook faster that way. And they’ll taste just as good in your curry. It ain’t rocket science, this cookin’.

More Than Just Curry

And it ain’t just curry, you know. They do all sorts of things with ’em. Sometimes they roast ’em, sometimes they fry ’em up crispy. I had these fried potato things once, little balls of potato with spices inside. Real tasty. Dipped ‘em in some kinda sauce. Sweet and sour, it was.

I tell you what, those potatoes, they’re a blessin’. They fill you up, they’re cheap, and they taste good with just about anything. Them Indian folks, they figured out how to make ’em even better. With all them spices and such, it’s like a party in your mouth. A tasty, spicy party.

So, next time you see somethin’ about Indian food, don’t be shy. Give it a try. Especially if it’s got potatoes in it. You might just find yourself a new favorite dish. And who knows, maybe you’ll start cookin’ it yourself. It ain’t so hard. Even an old woman like me can do it. Just remember to keep it simple, use plenty of spices, and don’t overcook them potatoes. You’ll be eatin’ good in no time.

And don’t forget the rice! You gotta have rice with Indian food. It soaks up all that good sauce. Makes it even tastier. And if you’re feeling fancy, you can get some of that flatbread, the naan they call it. Good for dippin’. But me, I’m happy with just rice and potatoes. Good, honest food, that’s what I like.
