Okay, folks, let’s dive into the kitchen and whip up something delicious! Today, we’re tackling ricotta and pumpkin – a match made in culinary heaven, I tell you. I’ve been experimenting with this combo, and oh boy, the results are worth sharing.

My Ricotta Pumpkin Adventure Begins

So, I started with a basic idea: I wanted something savory, but with that touch of sweetness from the pumpkin. I had some leftover ricotta from a lasagna night (always a good thing!), and a can of pumpkin puree sitting in the pantry. I decided to document it all!

Gathering the Troops (Ingredients, That Is)

First, I made sure I had everything I needed. Here’s what my counter looked like:

  • Pumpkin Puree: About a cup. I used canned, because, let’s be real, it’s easy.
  • Ricotta Cheese: Roughly a cup and a half. I used whole milk ricotta because, why not?
  • Spices: This is where it gets fun. I grabbed some cinnamon, nutmeg, a pinch of cloves, and of course, salt and pepper.
  • An onion: For the savory part.
  • Garlic:Two cloves, crushed.
  • Olive Oil: Just for sauteing.

The Cooking Process

I started by dicing that onion. I sauteed the diced onion with olive oil in a pan until translucent.

Then added two cloves of crushed garlic.

Next, I added my spices to the pan. I let all the spices bloom in with the sauteing onion and garlic for about a minute.

Then, I dumped in the pumpkin puree and gave it a good stir. I let that simmer for a bit, just to get everything nice and combined.

Now for the star of the show – the ricotta! I gently folded it into the pumpkin mixture. I wanted to keep it creamy, not turn it into a paste.

Finally I added a pinch of Salt and lots of Pepper.

The Final Result!

It turned out AMAZING. Seriously, the creamy ricotta with the sweet and savory pumpkin…it’s a winner. I’ve put this on pasta, spread it on toast, and even used it as a dip with some crusty bread. It’s just delicious!
