Okay, so the other day I was staring into my fridge, trying to figure out what to make for dinner. I had a big old eggplant and a head of cauliflower just sitting there, begging to be used. I thought, why not put them together? And that’s how I started my little cooking adventure.
Getting Started
First, I washed both the eggplant and the cauliflower. I chopped the eggplant into these chunky cubes – not too small, not too big. The cauliflower, I broke it down into florets. I just like how they look when they’re roasted.

- Eggplant: 1 large, cubed
- Cauliflower: 1 head, cut into florets
Spicing Things Up
Then, I grabbed a big bowl and tossed the veggies in there. I drizzled some olive oil over them – you know, just enough to get them coated. I didn’t measure, I just eyeballed it. Then came the fun part: the spices. I sprinkled in some salt, pepper, garlic powder, and a bit of paprika. Oh, and a dash of cumin because why not? I like that smoky flavor.
Roasting to Perfection
After mixing it all up, making sure the veggies were nicely coated with the spices, I spread them out on a baking sheet. I preheated my oven to, like, 400 degrees Fahrenheit. Once it was hot, I popped the tray in and let them roast. I think it was for about 25 to 30 minutes. I kept checking on them, though. You want them to be tender and a little crispy on the edges, you know?
Adding a Little Extra
While the veggies were roasting, I cooked some basmati rice. Just followed the instructions on the packet, nothing fancy. I added like 1 and a half teaspoons of salt and 2 large garlic cloves, minced. Also added 3 cups of the rice.
Putting it All Together
Once the veggies were done, I took them out of the oven. They smelled amazing! I let them cool for a bit. Then, I served them over the rice. I also squeezed some lemon juice over the top for that extra zing. And there you have it, a simple, tasty meal made from just a few ingredients.
