Oh, honey, let me tell you about zucchini. It’s that green thing, kinda looks like a cucumber but ain’t. It grows like weeds in the garden. You gotta do something with it, or it just takes over, you know? I got some zucchini recipes for ya. Good ones. Easy ones, too.
Zucchini Bread Recipe
This zucchini bread, it’s the best. My neighbor, she gave me this zucchini bread recipe years ago. Now, I make it all the time. Everybody loves it. Even the picky eaters, they gobble it up. You just gotta try this zucchini bread recipe.

First, you gotta shred up that zucchini. Maybe two, three cups. Then you mix up the dry stuff. Flour, baking soda, salt. All that stuff. Put it in a big ol’ bowl.
- Flour, ’bout three cups
- Baking soda, just a teaspoon
- Salt, a little pinch
- Cinnamon, if you like it. I always put some in.
Then, in another bowl, you mix the wet stuff. Eggs, oil, sugar. Beat it real good. Make it all nice and smooth. You can use that electric mixer thing if you got one. I just use a fork, does the trick.
- Eggs, couple of ’em
- Oil, I use that vegetable oil, ’bout a cup
- Sugar, two cups. Makes it nice and sweet.
- Vanilla. It makes it taste good, you know? A little splash.
Then you mix it all together. The wet stuff, the dry stuff, the zucchini. Mix it good, but don’t overmix it, you know? Then you pour it in a pan. A loaf pan. Grease it up first, so it don’t stick. Bake it in the oven. ‘Bout an hour, maybe less. Just keep an eye on it. When it’s brown on top, and you stick a toothpick in and it comes out clean, it’s done. There you have it, the best zucchini bread recipe ever.
Zucchini, Zucchini, Zucchini
Lordy, zucchini, it just keeps comin’. You can fry it, bake it, put it in bread. I even heard of folks makin’ noodles outta it. Can you believe that? Noodles! Outta zucchini! We used to just feed it to the hogs if we had too much. But now, folks are gettin’ all fancy with it.
The Biggest Zucchini You Ever Did See
One time, I grew a zucchini so big, you wouldn’t believe it. It was bigger than my arm, I swear! We took a picture with it. That thing was a monster. It was the largest zucchini in the whole county, I bet. We didn’t even know what to do with it. It was too big to eat, almost. Probably coulda made ten loaves of zucchini bread with that one. That zucchini was a record largest zucchini. I wish I still had that picture.
I saw in the paper, some fella grew a zucchini even bigger than mine. He got in the record book for it. Can you imagine? A record for the largest zucchini. I guess anything’s possible these days. We didn’t have no record book for zucchini when I was a girl. We just grew ’em and ate ’em.
That record largest zucchini must have been the size of a small car. I bet it took a whole lotta people to carry that thing. And you can bet your bottom dollar they made a lot of zucchini bread with that thing. The largest zucchini is really somethin’ else.

You can do a lot with zucchini. You can slice it up and fry it. Just dip it in some egg and flour, then fry it in a little oil. Makes a nice little side dish. You can also put zucchini in soup, stew, casserole. It’s good in just about anything. The zucchini recipes are endless!
I like to put it in my spaghetti sauce. Makes it nice and thick. And you don’t even taste it, really. It just kinda melts right in. It’s a good way to get your vegetables, you know? Especially for the young’uns who don’t like to eat their greens. Hide that zucchini in the sauce, they’ll never know.
