You know what? I tried the South Beach Diet thing. Yeah, the one that’s supposed to be all about good carbs and lean protein. It is not bad, but I really want some desserts. I got some recipes for my sweet tooth.

Ricotta Almond Creme
First, I tried making this Ricotta Almond Creme. The recipe said it was okay for Phase One, which is the strictest part. I just mixed some ricotta cheese with almond extract. It wasn’t bad, honestly. It was kind of plain, but with a splash of Amaretto. And if I am not dieting, I will add some sugar. That is much better.
Flourless Black Bean Brownies
Next, I moved on to these Flourless Black Bean Brownies. I know, it sounds weird. Brownies made with black beans? But I gave it a shot. I blended up the black beans with cocoa powder, eggs, and some other stuff. It was a bit of a process, to be honest. They actually turned out okay. They were fudgy, and you couldn’t really taste the beans. Not exactly like a regular brownie, but it satisfied my chocolate craving.
Mini Cocoa Swirl Cheesecakes
Then, I made these Mini Cocoa Swirl Cheesecakes. I love cheesecake! For this one, I mixed cream cheese with eggs and a little bit of sugar substitute. Then, I swirled in some cocoa powder to make it look fancy. I baked them in little muffin tins. They were pretty good, they really hit the spot when I wanted something creamy and sweet.
Other Things I Tried
- Fruit Salad: Just chopped up some fruit. It’s simple, but it works.
- Greek Yogurt with Berries: I mixed some plain Greek yogurt with a handful of berries. It was tart and sweet.
- Chia Seed Pudding: Soaked some chia seeds in almond milk overnight and added some vanilla extract. It’s an acquired taste, kind of like tapioca.
- Frozen Banana Pops: I froze some bananas on sticks and dipped them in a little bit of melted dark chocolate. It was like a healthy ice cream.
These desserts helped me stay on track with the diet. I didn’t feel like I was missing out too much. It was a good experiment. Now I know I can still enjoy some sweets while watching what I eat.
