Okay, so today I got a real hankering for some curry. I decided to whip up a batch of curry sauce chicken, something I haven’t made in ages. Figured I’d share the process since it turned out pretty darn good.
First, I grabbed a couple of chicken breasts from the fridge. Chopped those up into bite-sized pieces. Then I diced up an onion and a few cloves of garlic – gotta have that base flavor, you know?

Making the Curry Sauce
- I heated up some oil in a big pan and tossed in the onions. Sautéed those until they were nice and soft.
- Next, the garlic went in. Cooked that for a minute or two, just until it was fragrant. Don’t want to burn it, that’s no good.
- Then came the fun part – the spices! I added a good spoonful of curry powder, some turmeric, cumin, and a pinch of chili powder for a little kick. Stirred that all together and let it cook for a bit to really bring out the flavors.
- After that, I poured in a can of diced tomatoes and some chicken broth. Brought that to a simmer and let it cook down for about 15 minutes, until it thickened up nicely.
Once the sauce was ready, I added the chicken pieces to the pan. Made sure they were all coated in that delicious sauce. Turned the heat down to low, covered the pan, and let it simmer for about 20 minutes, until the chicken was cooked through.
While that was going, I cooked up some rice. Just plain white rice, nothing fancy. Once the chicken was done, I served it over the rice. Sprinkled some chopped cilantro on top for a bit of freshness. And there you have it – a simple, tasty curry sauce chicken. It really hit the spot!
This chicken curry is full of flavor and super easy to make. It is not only delicious but also packed with protein, making it a healthy choice. I will try other recipes in the future.
