Okay, so today I tried to make some spring rolls using Lean Cuisine as a base. I’ve been trying to eat a bit healthier lately, but I also love experimenting in the kitchen. So I thought, why not combine the two?
First, I grabbed a box of Lean Cuisine, I think it was the chicken and vegetable stir-fry one. I cooked it in the microwave according to the package directions. Smelled pretty good, actually!

While that was cooking, I got all the other stuff ready. I had some rice paper wrappers that I soaked in warm water for a few seconds until they got soft and bendy. I also chopped up some fresh veggies – some carrots, cucumbers, and a little bit of red onion, just for some extra crunch and flavor.
Once the Lean Cuisine was done, I laid out one of the softened rice paper wrappers on a plate. I spooned a good amount of the chicken and veggie mixture onto the center of the wrapper, careful not to overfill it. I added my chopped fresh veggies on top of the Lean Cuisine.
Now came the tricky part – the rolling. I started by folding the bottom of the wrapper up over the filling, then folded in the sides. Then I just kept rolling it up tightly, kind of like a burrito. It took a couple of tries to get the hang of it, but eventually, I got a decent-looking spring roll.
I repeated the process with the rest of the Lean Cuisine and made a few more rolls. Not gonna lie, they weren’t the prettiest spring rolls I’ve ever seen, but hey, it was my first time!
For the dipping sauce, I just whisked together some soy sauce, a little bit of rice vinegar, and a pinch of sugar. I added some water for making it not too thick. Simple, but it did the trick.
And that’s it! I ended up with a plate of homemade-ish spring rolls. They were actually pretty tasty! The Lean Cuisine provided a good base flavor, and the fresh veggies added a nice crunch. Dipping them in the sauce made them even better.
Honestly, it wasn’t a bad experiment for the first time. I’d probably tweak a few things next time, maybe try different veggies or add some herbs. Might even try a different Lean Cuisine flavor. But overall, I’m happy with how they turned out. It was a fun and somewhat healthy way to jazz up a frozen meal.
