Hey folks, let me tell you about this thing I cooked up the other day. I had some carrots and a bag of spinach just sitting in the fridge, and I was thinking, “What am I gonna do with these?” Then I remembered I had some couscous in the pantry, and I thought, “Why not?” So I got started with it.
First, I washed those veggies real good. You gotta get all that dirt off, you know? Then I chopped up the carrots into these cute little rounds. I left the spinach leaves whole ’cause they shrink up so much when you cook ’em anyway.
Next, I grabbed a big ol’ pot and heated up some olive oil. I tossed in the carrots first. Let them sizzle for a bit until they got a little soft. While that was going on, I boiled some water in another pot for the couscous. You just pour it over the couscous, cover it, and let it sit. Easy peasy.

- Chop the carrots into small pieces.
- Heat olive oil in a pot.
- Cook the carrots until they’re a bit soft.
- Boil water and pour over the couscous, then cover.
Once the carrots were cooked a bit, I threw in the spinach. It wilted down pretty fast, just a couple of minutes. I also added a can of diced tomatoes, juice and all. It adds a nice bit of tanginess and makes it all juicy.
Fluffing and Flavor
After that, I fluffed up the couscous with a fork. It was all light and fluffy, just how I like it. Then comes the fun part – mixing it all together! I combined the couscous with the carrot, spinach, and tomato mixture. Seasoned it with some salt, pepper, and a dash of garlic powder. I gotta say, I like my food with a bit of a kick.
I let it all simmer together for a few more minutes, just to let those flavors get to know each other. And you know what? It turned out pretty darn good! It was a simple, healthy, and tasty meal. Even my picky eaters at home gobbled it up. I was pretty proud of myself, not gonna lie. If I can make it, anyone can, right? It’s definitely going into my regular recipe rotation.
