Once the grill was ready, I placed the fillets directly on the grates, skin-side down if you’re using skin-on fillets. I let them cook for about 4-5 minutes, undisturbed. You want to get those nice grill marks. Then, using a spatula, I carefully flipped them over. They were looking golden and delicious! The other side cooked for another 3-4 minutes, until the fish was opaque and flaked easily with a fork.
The Results
Man, oh man, the smell was amazing. The walleye came off the grill looking perfect, with those beautiful grill marks and a slight char. I served them up with some grilled veggies – I did some asparagus and bell peppers alongside – and a side of wild rice. It was a feast!
