Alright, folks, gather ’round! Today I’m spilling the beans on my kitchen adventures with hamburger and Rotel recipes. Trust me, it’s easier than trying to parallel park in downtown!
First things first, the hamburger. I started with about a pound of ground beef. Nothing fancy, just your regular 80/20 blend. I like a little fat for flavor. Threw it in a big bowl and got my hands dirty. Gotta get in there, you know?

Now, for the seasoning. I kept it simple: salt, pepper, garlic powder, and a dash of Worcestershire sauce. Don’t be shy with the garlic powder, that’s the secret weapon! Mix it all up real good, but don’t overwork the meat. You want it tender, not tough.
Formed the mixture into patties, about half a pound each. Made a little indentation in the center of each patty with my thumb. This helps prevent them from puffing up like a football when you cook them.
Got my cast iron skillet screaming hot on the stove. A little bit of oil, just enough to coat the bottom. Sizzled those patties for about 4-5 minutes per side, until they were nice and browned and cooked through. I like mine medium-well, no pink in the middle!
While the burgers were cooking, I prepped the Rotel dip. This is where things get really easy. One block of cream cheese, softened. One can of Rotel diced tomatoes and green chilies, drained. Throw ’em both in a microwave-safe bowl.
Microwaved that mixture for about 2-3 minutes, stirring every minute or so, until the cream cheese was melted and everything was all creamy and delicious. Give it a good stir to make sure it’s smooth.
Pulled the burgers off the skillet and let them rest for a few minutes. This helps keep them juicy. Toasted some buns, added my favorite toppings (lettuce, tomato, onion, a little mayo), and slapped those juicy burgers on.
And then, the grand finale: a dollop of that warm, cheesy Rotel dip right on top of the burger. Oh man, it was heavenly! The creamy, spicy dip with the juicy, savory burger? Chef’s kiss
