So, Easter’s coming up, and like, everyone’s posting all these amazing-looking desserts, right? But my grandma’s diabetic, and I always feel bad that she can’t really enjoy all the sugary goodness. This year, I was like, “No way, Grandma’s getting a treat!” So I went down this rabbit hole of trying to find diabetic-friendly Easter desserts.

First, I just Googled “diabetic easter desserts.” Man, there’s a lot of stuff out there! Some of it looked, um, questionable. Like, I’m sure it’s healthy, but does it actually taste good? I wanted something that wouldn’t make Grandma feel like she was eating cardboard.
I started messing around with some basic ideas. I figured fruit was a good place to start, because, duh, natural sugars. So I grabbed some:
- Strawberries (they were on sale!)
- Blueberries
- A couple of bananas (not too ripe, because, you know, sugar)
I thought about making a fruit salad, but that seemed kinda boring for Easter. Then I remembered those little parfaits you see at fancy brunches. So I grabbed some plain Greek yogurt (the full-fat kind, because it tastes way better) and some sugar-free sweetener. I ended up using that stevia stuff.
My “Experiment” Process (aka Making a Mess)
First, I washed all the fruit. This is important, people! Then I sliced up the strawberries and bananas. I kept the blueberries whole because they’re already bite-sized.
Next, I got out some cute little glasses – gotta make it look festive! I layered the yogurt, then some fruit, then more yogurt, more fruit. I sprinkled a tiny bit of the stevia between the layers. Not too much, because that stuff can be weird if you overdo it.
I tried one, and it was… okay. Needed something more. I remembered I had some sugar-free chocolate chips in the pantry (leftover from my last baking adventure).
